Inspired by the northern Indian dish called baingan bharta, we roasted the freshest eggplant from the Hudson Valley with tomatoes and spices like garam masala, ginger, cardamom and cinnamon to create a melt in your mouth savory stew. Tricolor quinoa and spiced chickpeas are covered in this blanket of hearty goodness and topped with tangy mango chutney, cilantro, and slivered almonds for a fresh finish to a perfect harmony of texture and flavor.
