Mac & Greens
Mac and cheese just got a makeover, courtesy of Olmsted’s Greg Baxtrom. His veg-centric version starts with a puree of buttery rutabaga and slow-simmered carrots and onions, with melt-in-your-mouth sharp cheddar folded in for a creamy sauce that's as guilt-free as it is gourmet. He's dressed it up with all your favorite super greens: roasted garlic broccolini, shaved Brussels sprouts, and spinach, then topped it off with a sprinkle of crispy onions and toasted panko for a crunchy, salty-savory finish. The old classic has never looked cheddar better.

Chef Greg Baxtrom has worked in some of the world's most acclaimed kitchens, including Alinea, Blue Hill at Stone Barns, and Per Se. He brings his signature vegetable-centric, intimate cooking style to our third chef collaboration.

The inviting 50-seat sanctuary is known for its thoughtful, seasonally-inspired menus, which showcase ingredients grown in the restaurant's own backyard garden and at local farms.
