Fans of pesto can get their fix in a healthier format with this Tuscan-inspired bowl, which mixes the basil-y decadence of pesto with a cornucopia of carefully prepared veggies. Starting with a base of spelt, we’ve mixed purple cauliflower with earthy brussels sprouts, roasted butternut squash, and creamy great northern beans. The basil pesto is avocado-based, so it’s decadent, but healthy too. Toasted pine nuts top things off with added crunch. Delizioso!

How to Enjoy

Microwave: Remove the plastic film from the top of the tray and add-ons. Microwave the meal for 4 1/2 - 5 minutes. Microwave the sauce for 40 - 50 seconds and stir. Do not microwave the pine nuts. Drizzle garnishes over bowl and enjoy.
Stovetop: Run sauce cup under warm water until loosened. Combine 1 teaspoon of neutral oil and 1 tablespoon of water in a nonstick skillet over medium heat. Add tray contents and frozen sauce; cover and heat for about 7-10 minutes, or until internal temperature reaches 165° F, stirring often. Garnish with toppings cup.
