This meatless Puerto Rican-inspired casserole is sure to be a new crowd pleaser. The base of our dish—the sofrito—is made with fresh cilantro, onions, cubanelle peppers and garlic. Smoky chipotle-infused vegan 'chorizo' is stewed with fiber-rich black beans, red peppers and roasted corn. A sweet mash of ripe plantains creates the top layer, contrasting with the savory filling for the perfect bite!

How to Enjoy

Oven
Oven: (Frozen): Preheat oven to 425°F. Remove plastic film from tray and cover with aluminum foil (we recommend spraying the foil with nonstick baking spray). Bake for 40 minutes, then remove foil and bake for an additional 20-30 minutes, or until internal temperature reaches 165°F. Ovens may vary so we recommend adding an extra 10 minutes if needed. Remove from oven and season with salt and pepper to taste. (Thawed): Preheat oven to 425°F.
