The wait is over! We are incredibly excited to announce the launch of 5 new entrees: all vegan, all with 25 grams of protein or more.
When Mosaic started back in 2019, Sam and I were looking for a better way to eat healthfully. We started cooking in my Brooklyn kitchen and launched with just 6 recipes. Our menu has come a long way since then — now we offer a full suite of entrees, tray bakes, soups, pizzas, and more! We're always working on new options that make eating nutritious, plant-based foods more accessible and convenient for our customers (and ourselves).
When I went vegetarian, I found myself constantly on the lookout for ways to get more protein into my diet. In talking to our customers, whether they’re trying out meatless Monday or they are life-long vegetarians, we’ve found that they’ve been craving the same. So we asked Chef Christine to do what she does best: hop in the kitchen and cook up delicious meals that check all the boxes. She quickly got to work coming up with flavorful, diverse, and nutrient-dense dishes that have at least 25 grams of protein, and are 100% vegan.

The team here at Mosaic has been lucky enough to get sneak peaks along the way, and we’ve all left our culinary meetings with happy taste buds and satisfied bellies. So, without further ado, introducing the lineup:
First up, the Sweet Chili Tofu Bowl: Our take on Thai Fried Rice has roasted tofu in a sweet chili glaze, served over quinoa and brown rice. It’s topped off with a healthy mix of veggies, crunchy roasted peanuts, and ponzu sauce.
The Penne "Bolognese" is the ultimate comfort food (and my personal favorite new dish), made with a hearty mix of tomato, carrots, and celery, finished with cashew cream, tossed with penne pasta and topped with crispy brussels sprouts.
If you’re craving heat, the Spicy Enchilada Bowl has got you covered. We mixed this fan-favorite dish with an herby cilantro sauce and ancient grain, kamut, for a healthy twist.
For a Middle-Eastern inspired bowl, we roasted meaty seitan with a fragrant spice blend and added a dollop of harissa hummus to serve as the flavor base for our Seitan Shawarma & Hummus Bowl.
And our Vegan Carbonara is a guilt-free version of the classic Italian dish, made with a creamy tofu sauce that is just as delicious as the original. We layer in cavatappi pasta, sweet and tender peas and smoky tofu 'bacon' for an added crunch.
