Corn, Greens, and Tomato Grits Casserole

This is a dish that will really bring everyone together. We used Hudson Valley grown yellow corn and tomatoes to make this the smokey and savory yet sweet casserole of your summer dreams. The best part is the creamy smoked gouda baked into layers of fresh spinach and fire roasted corn, and finished with cajun seasoning for a kick.
